With a culinary arts degree and over 25 years of experience, Nancy’s contagious enthusiasm and insatiable passion for food has taken her from being a director of a cooking school to a food consultant and recipe developer for some of the top food organizations in the nation. Through close collaborative efforts with her Clients, Nancy is able to offer the highest level of food expertise to reach the clients’ consumers.
She has also produced a large body of written works, provides food stylist and food photography services, and acts as a lecturer and expert spokesperson for various food organizations, among many other food consulting Services.
Nancy is the author of 17 nationally published cookbooks with more in the works. Recent titles include best sellers: The 4-Ingredient Diabetes Cookbook, 15-Minute Diabetic Meals Cookbook, The 1,500-Calorie-A-Day Cookbook, and The 1,200-Calorie-a-Day Menu Cookbook. Nancy has been privileged to develop recipes for over 60 cookbooks for major corporations and organizations, such as Weight Watchers, the American Diabetes Association, American Heart Association, Better Homes & Gardens, Cooking Light, Betty Crocker, Publications International, and Canola Info.
Nancy works with some of the top food companies in the nation, such as Del Monte® Foods, the J.M. Smucker Company, Pompeian Inc., and Smart Balance. Her company also works with major food councils, such as Canola Info, USA Rice Federation, National Processed Raspberry Council and the Pork Board.
Her articles and recipes also appear in various magazines, including Better Homes & Gardens, Cooking Light, Clean Eating, Cooking Club, Diabetic Cooking and Diabetic Living Magazine. Currently, Nancy has over 7000 recipes published.
Nancy’s passion and knowledge about food is also evident in her dynamic public speaking engagements. Recently she served as the featured chef and spokesperson for Del Monte® Foods at the Academy of Nutrition and Dietetics National Conference. She also served as a round-table food expert representing the National Processed Raspberry Council. In 2010 Nancy was the guest speaker at the Diabetes 4 Life Event at the Pensacola Civic Center. Also in 2010, Nancy spoke at the Canola Growers Association National Conference in San Francisco, California.
Nancy has done numerous interviews for national radio shows and performed as a TV personality in satellite media tours and in cooking demonstrations for local TV stations. Many of her clients also produce videos of Nancy preparing her new recipes for use in their online advertising, websites, and other platforms.

Nancy earned a Culinary Arts degree in 2001 at Faulkner State College in Alabama where she was awarded the All-Alabama Academic Team Award sponsored by Phi Theta Kappa Society and USA Today. She graduated Summa Cum Laude.
In 2007, Nancy completed a Media Training Certification program at The Lisa Ekus Group, a full service culinary agency, receiving focused training for the public speaking events, TV demonstrations, and radio interviews she often performs.
She is a member of the International Association of Culinary Professionals, American Association of Diabetes Educators, Research Chef’s Association, past president of the American Culinary Federation junior chapter and served on the Board of Governors for the Federation.
Currently Nancy S. Hughes has just published her 16th cookbook and resides in beautiful Daphne, Alabama, (near the Mobile Bay) with her husband, Greg.
